Punjabi Chole !!!

Chole or Chickpeas Curry is well known dish in North India .They often team it with Bhature ,Naan or any other Indian bread . There are several ways to cook this particular protein and Let me share  one of its most popular form of preparation Punjabi Chole .

Ingredients :200 g chole(chickpeas) soaked overnight in water ,2 medium sized tomatoes cut into wedges ,2 medium sized onion made into paste, 1 tablespoon of garlic ginger and green chilly paste,2 to 3 dry  red chillies, 1 teaspoon cumin seeds, two tea bags , 1 small cinnamon stick , 4 to 5 cardamom, kashmiri red chilly powder , 2 teaspoon chole masala , 1 inch long ginger cut into juliennes , Cooking oil 2 tablespoon , Salt to taste , 1 1/2 cup of luke warm water , Chopped coriander for garnish .

Servings : 4

Method : Boil Chole along with two tea bags , cinnamon stick ,cardamoms and salt until chole is tender , you can check its tenderness by mashing few with hand. After boiling do not throw the water in which it was boiled , you can separate cinnamon stick , cardamom and tea bags from the boiled chole .

Heat oil in a deep pan on a medium flame , add cumin seeds and dry red chillies .Once they stop popping add onion , ginger ,garlic and chilly paste together and saute for a about 3 to 4 mins. Once the ingredients turn light brown and separate oil add tomato wedges , little salt , chole masala , kashmiri red chilly powder and ginger juliennes and again stir the ingredients for about 3 to 4 mins in medium flame until tomatoes turn lilttle darker and tender separating oil from it. These ingredients should be well cooked as it might give raw taste to the entire dish if uncooked. Now add boiled chole along with Luke warm water and cover the pan with a lid for about 5 minutes in slow flame. Let the chole absorb the rest of the ingredients well. Once the water in the chole mixture evaporates a bit its ready to be served until then do not put off the flame. Once ready serve it hot with coriander garnish on top.
