Yellow Dal tadka, a very popular dish in North India .Preferably eaten with jeera rice or chapatis, is a very nutrious full of proteins tasty dish.A day to day recipe in northern India and served very commonly with veg thalis .Today yellow dal tadka recipe has a restaurant style twist in it, the way we get to eat them in our highway dhabas which is very simple to make .
For Yellow Dal :
2 Cups toor dal , 1 cup bengal gram dal, 1 cup finely chopped onions , 1/2 cup finely chopped tomatoes, 1 tablespoon finely chopped green chillies , 1 tablespoon ghee , 1 teaspoon turmeric powder , 1 teaspoon cumin seeds,1 teaspoon garam masala, salt to taste.
For Tadka :
1 tablespoon ghee,1/2 teaspoon cumin seeds, 1 whole dry red chilly, 1 teaspoon asafoetida (Hing), 1 tablespoon finely chopped garlic , Finely chopped coriander for garnishing.
Serving : 4
Method: Soak both the dals for an hour in luke warm water pressure cook it and add salt to taste. Heat a deep pan on high flame ,add ghee & cumin seeds after 10 sec add chopped onions and chopped green chillies .Sauté the onions till it turns transparent and not brown , add tomatoes ,some salt ,turmeric powder garam masala powder .Sauté the ingredients until tomatoes leaves oil from the sides. cook till dal reaches little bit of thickness but not very thick .Switch off the flame.
Take another small deeper pan put it on very high flame , add ghee , then add whole dry red chilly , chopped garlic , asafoetida, little bit of cumin let the ingredients cook for 30 sec , sprinkle water in the pan to get smoke which adds to the tadka taste . switch of the flame as Tadka is ready. Pour the cooked dal in a serving bowl , top it with fresh tadka and garnish it with coriander .Serve hot .
