100 g cooked rice, 1/2 cup onion chopped, 1/2 cup carrot diced, 1/2 cup capsicum chopped, 1/2 cup green peas, 1/2 spring onions chopped ,2 cups chopped tomatoes, 1 teaspoon taco seasoning, 1 teaspoon red chilly powder, 1 teaspoon chopped green chillies, salt to taste, oil to cook.
Heat a pan add oil , green chillies and onions . Sauté for 2 minutes then add all the green veggies and again sauté for 4 to 5 minutes. Now add tomatoes , taco seasoning salt and red chilly powder, cook for another 3 to 4 minutes. Add rice and spring onions and gently mix the rice with the vegetables . When done plate the dish with cheese as garnish .Serve hot.
