A spicy preparation of noodles which will turn your Friday night get together with friends a hit.Chinese dishes are always easy to make .The only effort goes in assembling the ingredients . Perfect blend of spices and veggies makes this dish an option to skip a wholesome meal and just dig into a bowl full of delight.
Ingredients : A large bowl of boiled egg noodles. 1 cup sliced onions , 1 cup sliced capsicum, 1 cup diagonally diced French beans, 1 cup carrot juliennes, 1 tablespoon garlic finely chopped , 1 tablespoon ginger juliennes ,1/2 teaspoon vinegar, 1/2 tablespoon dark soy sauce.1 teaspoon chopped green chilly, 1 teaspoon red chilly paste, salt and pepper to taste, chilly flakes for noodle seasoning, 1 teaspoon garlic & herb seasoning, olive oil for cooking and seasoning the noodles, Poached eggs (You decide the quantity ) for garnishing.

Method : Season the noodles after boiling it with pepper, chilly flakes and olive oil refraining them to stick to each other. Heat a shallow pan and add olive oil, garlic , ginger , green chilly and sauté them for 30 seconds on high flame. Now add Onions , and rest of the vegetables together and sauté them for 3 to 4 minutes. Add salt pepper , red chilly paste, dark soy sauce and vinegar to it and sauté for 1 more minutes and add noodles into the pan. Sprinkle garlic herb seasoning and stir the noodles evenly mixing all the ingredients well . All in High Flame. Garnish with poached eggs , and serve it hot.
