I had an amazing week with family and did special part of me that is cooking. Yesterday was one such day where I had no important work, weather was brilliant , so I thought of cooking. Its therapeutic for me . Whenever I feel aimless, leading no where, I get a reason to smile seeing my kitchen . I tried our very favourite (I am specific about my twosome) dish Shawarma . My recipe is quick , simple and easy to arrange. No grilling , no Tandoors required to season chicken In this one. So no going to turkish delight joints around your home. Enjoy the Turkish food right on your couch watching your favourite football match. I did this and felt amazing. Try It !!!
For filling :
300 g boneless chicken cut into small pieces, you can shred them thick too, 1 tablespoon garlic paste freshly prepared, 1 cup mozzarella cheese, 2 cup whole milk, 1 teaspoon cardamom powder, 1 teaspoon cinnamon powder, 1 teaspoon black pepper powder, 2 to 3 tablespoons egg less mayo , 1 cup sliced bell peppers, 1 cup sliced onions, Olive oil, Salt to taste.
For dough : 1 & 1/2 cup refined flour, 1 cup curd , 1 teaspoon baking powder, 1 teaspoon refined oil, 1/2 teaspoon baking soda.
Servings : 3 to 4 Shawarma rolls.
Methods : Firstly mix all the ingredient for dough and keep it aside wrapped in a moist cotton cloth for around two hours. Once done its time to marinate the chicken with cardamom powder, salt, garlic paste, cinnamon powder and pepper powder. Keep the chicken with marination for about 30 minutes . Heat a pan add olive oil, saute the marinated chicken until they are half done. add in milk and mozzarella cheese and a bit of all the dry spice powder mentioned in ingredients list. Dry the chicken until the milk and cheese mixture just coats the chicken pieces well and not very liquid. Add in onion slices and bell pepper slices cook for another minutes, put off the flame and cool it until they warm. For wraps just make dough balls equal portions and with help of a rolling pin make a flat bread . Bake it from both sides on a flat pan or Tawa like a chapati. Once the flat breads are ready, take equal portions of Shawarma filling top it up with egg less mayo and bit of pepper powder and wrap it under an aluminium foil. And we are ready to taste the popular Turkish food worldwide.
Note : Be generous in using mayonnaise as it add on to the flavouring.
