There is always a reason to take a break from monotony in dinner mid week and have something special . Summer is seriously taking a toll on our health and we cant afford to eat junk from streets. But …..yes there is always a but in my family , we need good food. Glad I ended up here to delightfully cook for them. From past few days recipes are just there in my head and I am unable to materialise anything. That’s is more exhaustive for me. Its summer ingredients which I prefer are rare to find in markets so I just ended up cooking something really easy and great on platter. You all must try this.
Ingredients : 400 g cottage cheese (Paneer ) diced into small cubical pieces. 3 medium red onions sliced, 6 to 7 garlic cloves , 2 large green chillies, 1 cup yoghurt, 3 teaspoon black pepper powder, 1 teaspoon coriander powder, 1 teaspoon cumin powder, salt to taste,1 teaspoon sugar, 2 cups milk, 2 -3 cardamom, 1 cinnamon stick 1 tablespoon oil for cooking, I tablespoon coriander chopped, 1 tablespoon mint leaves chopped, 1 teaspoon dry fenugreek leaves roasted and powdered.

Method : Its a simple process to first heat 1/2 tablespoon oil in a pan and cook onion, green chillies, sugar salt & garlic until onions caramelise and turn brown. Once done blend it in a blender and add yoghurt and 2 teaspoon black pepper powder in the mixture .Its a base gravy for the paneer . Now heat the rest of the oil and add whole spices cardamom and cinnamon. Add in the base gravy to the saute the gravy for 10 minutes. Add dry fenugreek powder cumin powder and coriander powder , salt, half of the mint and coriander chopped with two cups of milk cook for another 5 minutes on slow flame. . Now add the paneer cubes and spread it all over the pan. Add in rest of the chopped coriander and mint leaves close the pan with a lid and let the paneer absorb the aroma and taste of the spices in the gravy. That’s it after 5 minutes switch off the flame but do not removes the lid for another 5 minutes. After that just gently mix the paneer with gravy totally and the dish is ready to be served with your choice of flat bread whether its chapatti or naan. But do remember to garnish it with 1 teaspoon of black pepper powder and a bit of green coriander chopped.
