Marble cakes reminds me of my childhood when my mum used to bake a cake without a oven that to in pressure cooker . They were the fluffiest , softest , yummiest cakes from my memory lane . I learnt cooking from her and still call her to take tips . She still thinks I need a lot of lessons but when she hears about my blog from my friends and family I know she is always proud within . This marble cake recipe is from my mums kitchen , I always feel her cakes were best but I still try to match up with her . CHEERS to my Mum !
Ingredients : 1 & 1/4 cup refined flour, 100 g unsalted butter , 1 & 1/4 cup powdered brown sugar, 2 tablespoon cocoa powder, 1 teaspoon vanilla essence , 2 large eggs , 1 teaspoon baking powder, 1 teaspoon baking soda . https://nishachakraborty.files.wordpress.com/2015/08/dsc_1715.jpg
Servings : 8 slices .
Method : firstly beat the eggs sugar and butter together till they are soft and fluffy with light texture, add in the vanilla essence and mix gently . Divide the refined flour baking powder and baking soda into two portions . Mix cocoa powder in one refined flour portion. dry stuffs are ready . Now divide the butter, brown sugar and egg mixture into two equal portions and mix separately with refined flour mixture. This is the only hectic part. Once the batter is ready just grease the baking dish with butter thoroughly and dust it with refined flour . Preheat the oven at 170 degrees for 10 minutes. Now layer by layer pour in the batter on the baking tray. Trick is to pour in the white batter first and then chocolate cake batter next . Once the pouring is complete level up the baking tray and with help of finger just make a swirl on top to get a marble effect better . Bake the cake till 25 to 30 minutes. After cooling the cake a bit after baking cut into large slices and serve .
Note : If you feel your batter is slightly dry please add in a bit of milk to have a smooth flour in the batter. Be careful while adding the milk. Usage of brown sugar will give the brown texture to the brown marble cake !
Early morning breakfast with family makes your start for the day better. Its an old saying ..”family that eats together stays together” . I completely believe in this philosophy as bonding is very important. I inculcated this habit from my father and I always make it a point to share at least one meal a day with my family if two even better. For that if breakfast menu turns out to be cheesy and crispy what more can we ask for. I cooked breakfast and strategically placed it on one platter so that all can sit together and share from the same plate. These small little tricks can never go wrong and if you add cheese to this trick all will just sniff around table like mice. I had a very energetic and lovely morning , work was good day ended up very well. Why not just do these silly little things to stay connected in this world of smart phones and internet extravaganza . Do think about it !
Ingredients : cheese and garlic loaf (whole), thin slices of one large tomato, thin slices of mozzarella cheese, 1 teaspoon mixed dry herbs, 1 teaspoon oregano. 1 teaspoon pepper , salt to taste, 1 tablespoon olive oil.
Servings : 4
Method : Take the loaf and try to make sliced ridges in equal distance (sounding like Geometry but don’t worry its easy) keeping the bread intact. Mix all the dry herbs and salt . Now take cheese slices and tomato slices and fill in the ridges alternatively. Do it with ease so that you do not overload the ridges and slices get detached from each other. It should be like a full loaf with envelops filled with cheese and tomato. Now sprinkle the dry herb and salt mixture over the top and keep the whole bread on a heated flat pan ( pan over burner) all covered by a lid. after 1 minutes add in the olive oil so that we can avoid the bread getting stuck at the bottom or getting burnt. again cover the lid . Simmer the burner flame and cook till the cheese starts melting from the sides. Once done serve it in a platter and juts cut the slices with a knife and enjoy the wholesome breakfast with your favourite tea or coffee.
I am back to kitchen experiment routines and I was enjoying the Sunday breakfast cooking .Last week I attended a wedding reception of my ex-colleague and met few more at the party. As usual they were asking same old questions to me whether I cook it myself or whether I click it myself ( Same old questions which I was tired answering to people despite my pictures are taken at the same background or written as nisha’s photography….) Still it makes me feel good at the end of it because they talk about my blog . I love it when people say wow after seeing my dishes and compare it with top notch restaurants. Its worth answering those questions no matter how many times they ask me. It just keeps me sane….after all we all love attention.
Ingredients : 8 slices of brown bread, 2 eggs , 1/4 cup cold milk, finely chopped de seeded tomatoes, 1 teaspoon garlic chopped and sautéed in butter, grated mozzarella cheese, salt to taste, 1 teaspoon oregano, 1 teaspoon chilly flakes.
Servings : 4
Method : Take a round cookie cutter and cut bread circles through it. with a rolling pin flatten it. Preheat the oven at 180 degree centigrade , put this bread pieces in muffin moulds like a shape of baskets and bake it for 2 to 3 minutes. Beat egg ,milk ,chilly flakes oregano, salt , together. Once breads are done. add little bit tomato in each cups sautéed garlic and grated cheese in equal portions and with help of a spoon just add in the egg and milk mixture to each moulds . bake the bread cups for another 15 minutes until its light brown on the surface. Once baked de mould the bread cups and enjoy hot.
I love experimenting and today I poached eggs the way it should be . I used no oil and poaching was just perfect . Eggs turned out to be very soft and creamy textured. I love my eggs poached and I was excited to try the actual poaching technique today. So teamed it up with some home made coleslaw and burger bun. tadaaaaaaa…….Lunch was ready….and it was healthier from the usual burger I crave for …..!!!
Ingredients : 2 eggs, 2 tablespoon Egg less Mayo, 1 tablespoon finely chopped cabbage, 1 tablespoon finely chopped carrot, 1 teaspoon pepper powder, 1 tablespoon mustard sauce, 1 tablespoon margarine,2 sesame Burger buns.

Method : To poach eggs just boil water in a flat container and just drop in a broken egg carefully in the boiling water itself. with the help of a spoon top the egg yolk with biling water so that the egg surface also gets cooked. Do stir the eggs but very gently so that yolk spreads intact and doesn’t spread away. That’s the only trouble you have to take. To make coleslaw just mix cabbage, carrot and egg less Mayo . assembling of burger will be layer wise. Firstly warm the buns so that they taste fresh and soft, spread margarine over it , then mustard sauce. Top it with Coleslaw and then add in poached eggs. sprinkle some pepper powder and burger is ready with its filling all intact.
I have a giant sweet tooth and have no regrets as I sweat it out to meet break even (Lol). I have never experimented with bananas as its my least favourite in fruits. But to my surprise my experiment with banana turned out to be really awesome and tasty. Most importantly it sufficed my giant sweet tooth and hungry tummy today morning .So never say never is the right quote for me now as I am having hots for these yummy caramelized banana splits. Try it !!!
For banana split : 2 ripe bananas slit into two halves, 1 cup brown sugar, 1 tablespoon butter, 1 teaspoon cinnamon powder, 2 tablespoon rum .
For whole wheat pan cakes : 1 cup whole wheat flour, 2 tablespoon sugar, 2 beaten eggs, 1 cup milk , 1 teaspoon vanilla essence. Oil for greasing pancake edges.
Servings : 2
Method : Just make the pancakes first in order to do that you just need to mix all the ingredients keep it for 15 minutes and spread it in a flat pan on medium flame grease it with oil and bake it from both sides. Pancakes just get ready in a flow.
Now the easiest part is making banana split. Once you heat the butter in a pan add brown sugar and on slow flame heat it till sugar melts . Add cinnamon powder and bananas to it and coat the bananas well. Add rum and switch of the flame. plate the bananas over the pancakes and serve hot with fruits or simple whipped cream .

For Palak Puri : 2 cups of whole wheat flour , 1/2 a bundle of spinach roughly cut de-rooted and washed,1 teaspoon oil for moistening of the dough , 1 teaspoon red chilly powder, 1 teaspoon Asafoetida (Hing), 1 teaspoon carom seeds, salt to taste, 1 teaspoon of green chilly paste. Water if required for dough, Oil for deep frying.
For Potato curry : 4 medium size potatoes cut into 4 pieces each, 1 tomatoes roughly chopped, 1 cup green peas, 2 dry red chillies, 1 teaspoon cumin seeds, 1 teaspoon whole coriander seeds, 1 green chilly chopped, 1 teaspoon kashmiri red chilly powder, 1 teaspoon turmeric powder, 1 teaspoon cumin and coriander powder each, 1 teaspoon Asafoetida, Oil for cooking and Salt to taste.
Servings : 2 to 3
For palak puri : Firstly take a pan and boil water into it. Put the washed spinach leaves into the boiling water and boil till the stem of the leaves are tender. Immediately put the boiled spinach in icy cold water so that overheating does not soil the colour of spinach. Once the spinach cools down blend it in form of thick puree. Now Mix all the ingredients into a fine and soft dough . Try using less water to make a dough as puree itself has a lot of moisture to bind the flour and spices.Keep the dough for 30 minutes and then make small rounds of it with the help of rolling pin . deep fry it till it pops out of the oil and once ready serve hot with Aloo Matar curry .Recipe below
For Aloo Matar Curry : Heat oil in pan and saute cumin seeds, red dry chillies, green chilly chopped, Asafoetida, whole coriander seeds till spluttering stops, add cut potatoes, salt and turmeric powder, cover the pan with a lid and slow the flame for about 4 to 5 minutes till the potatoes become tender ,once its done add tomatoes , green peas and rest of the dry spices cook for another minutes and add 1/2 cup water . Cook for another 3 to 4 minutes till peas and potatoes cook evenly and then serve it with palak puri’s freshly deep fried.

Ingredients : 10 slices of whole wheat bread, 1 cup hung curd (Yoghurt hanged for an hour in a muslin cloth like a pouch ), 1/2 cup grated carrot, 1/2 cup finely chopped green capsicum, 1 teaspoon chopped green chilly, 4 teaspoon of powdered sugar, 1 teaspoon salt, 1 teaspoon of mustard seeds, 1 teaspoon of red chilly powder, few curry leaves, 1 tablespoon olive oil.
Servings : 5
Method : Heat oil in a flat pan and add mustard seeds and curry leaves. Once the mustard seeds starts spluttering switch of the flame add chilly powder and mix it with the hung curd. Now add grated carrot , chopped capsicum and chopped green chilly along with sugar and salt to the hung curd and mix all the ingredients well. Spread that mixture on 5 slices and sandwich it with another bread slice. Cut it from the centre in two halves and serve with your favourite dip. Isn’t it quick and easy?
